Baking Potato Pudding






Recipe Ingredients:

1 Large Potato (approx. 2lbs)

3 Cups Coconut Milk

1 TSP Nutmeg

1 TSP Cinnamon

1/2 Cup Shredded/Grated Coconut

1 TSP Coconut Oil

1 TSP Vanilla

3/4 Cup Sugar (If you want it to be sweet, use 1 cup)

Instructions:

Peel and dice the potato then blend 2/3 of it or grate the potato. Blend 1/2 cup diced cocnut with the potato.

Shred the rest of the potato in the food processor. This will thicken the texture.

Blend potato together

Add coconut mil

Add vanilla

Add dry ingredients

Mix then pour into a baking pan

Bake for 60 minutes at 350 degrees
